Indian Spiced Chicken and Spinach ( 9 points)

2 tablespoons light margarine -- divided
6 each chicken drumstick, no skin, R-T-C
1/4 cup flour, all-purpose
2 tablespoons salt -- divided
1/2 each small onion
2 each jalapeno pepper -- seeded and minced
3 each garlic cloves -- minced
2 tablespoons curry powder
1 tablespoon ground ginger
1 tablespoon cumin
1 tablespoon coriander
1/2 teaspoon turmeric
1/2 teaspoon paprika
1/2 teaspoon cinnamon
1 1/2 cups water
1 each chicken bouillon cube
1/2 cup crushed tomatoes
1/4 cup skim milk
1/4 cup fat-free cottage cheese
1 tablespoon honey
20 ounces frozen spinach -- thawed and drained
2 cups cooked couscous

Melt 1 tablespoon margarine in a large frying pan. Dredge drumsticks in flour and sprinkle with salt. Fry until browned on all sides.

In separate large pan melt 1 tablespoon margarine and add onion, jalapeno and remaining spices. Over medium heat allow spices to become fragrant then add water, bouillon and tomatoes. In a blender put cottage cheese with skim milk and blend until smooth then add it to the spice, tomato mixture. Add spinach and honey then bring mixture to a boil.

Pour spinach mixture over the chicken pieces and scrape any scraps of browning from the bottom of the pan. Cover and simmer on low heat until chicken is tender. Serve over cooked conscious.

Happy Christians

At SmartChristian blog they ask if happiness should be a life value for Christians..see link

I would say that yes happiness is a value and not selfish at all. The Lord died for us to have an abundant life and happiness is a part of that. Sure we have problems and suffer at times, but I would never consider happiness as selfish.

I wonder why some would?

WV State Fair

Headed to the West Virginia State fair this evening. Keith Urban will be in concert.

While KU is secular, his music does seem to have a committed air to it, which I enjoy.

I hate some of those loving and leaving type songs.

Restrictions, Restrictions

Isn't it odd how some persons love placing restrictions in others lives?

I truly feel if the restrictions we think have to be in place should be something we only go about placing in our own life then maybe we wouldn't be so inclined to try and force them on others...

sure we need laws..but I'm talking little things like..
Don't place pink flamingos in your yard and only do laundry on Monday..

Home Fellowship



Also have gotten into a home fellowship which I love. It isn't so much like the business structures of commercial, expanding churches and they even wish to stay small and family structured.

Sort of like the start up churches in Acts where they met in personal places. Nice.
